Entry 2: Tostada con Jaiba, 06.16.25

I cooked this one up when I got home from the gym. It was nice because it was fairly easy to prepare.

Diced red onions, tomato, jalapeno, cucumber and jaiba. Seasoned with salt, seasoning salt, garlic powder, msg, lemon.

Next Time I would like to try the following:

- Don't forget to buy cilantro

- Extra lemon

- A little less Msg

Entry 1: Creamy Cajun Chicken Pasta, 06.15.25

This was my first time cooking for myself in nearly a month. I have not had the energy recently, but knew that both the process of preparing and eating a homecooked meal would make me happy. Although I always seem to screw up pasta recipes for whatever reason, I decided to try this recipe I have been interested in trying for awhile. I did not mess up the dish, and will link the original recipe here.

I did not follow the recipe entirely. I eyeballed the seasoning instead of measuring, deglazed the pan with lemon, used a slightly different pasta shape, used a little extra cream cheese, and used Knorr caldo de pollo tomato flavor as well as Adobo. Overall, I was pleased by the results but would make a few tweaks for next time.

Next Time I would like to try the following:

- Not use extra cream cheese, but still deglaze with lemon

- Use half coconut milk and half heavy cream

- Cut the bell peppers into strips rather than tiny cubes, maybe add some shrimps

- Use an unsalted cajun seasoning

- Do some research on some similar recipes, or rasta pasta recipes and check if there are any elements I want to combine.

All this said, I still enjoyed the pasta and so did my roommate. She complimented me to the moon and back although I am not sure if she was just trying to be nice. She is a pretty honest person though, so I take her compliments genuinely. I am happy to finally cook again, and I look forward to my lunch (leftovers) tomorrow.
